The yam bean is one of the most well-known edible tropical legumes (illustration). It is a perennial vine resembling kudzu, with a large tuberous root that is eaten raw or cooked. It grows to a diameter of about 40 cm and a weight of 5-15 kg. When cut, the inside is white and rich in starch and sugar. It is very different from many legumes that produce edible beans or legumes. ヤム・ビーンyam beanと呼ばれ,熱帯地方の有名な食用マメ科植物の一つである(イラスト)。一見クズに似た多年生のつる草で,大きな塊根があり,これを生のまま,または料理して食用とする。直径約40cm,重さ5~15kgくらいにまで大きくなり,切ると内部は白色で,デンプンや糖に富む。豆や豆果を食用とするマメ科植物の多くとは,大いに異なっている。茎は長さ2~6m。葉は互生し,3小葉をもつ複葉で,基部に狭長卵形の托葉がある。
