The yam bean is one of the most well-known edible tropical legumes (illustration). It is a perennial vine resembling kudzu, with a large tuberous root that is eaten raw or cooked. It grows to a diameter of about 40 cm and a weight of 5-15 kg. When cut, the inside is white and rich in starch and sugar. It is very different from many legumes that produce edible beans or legumes.
