A type of tribasic hydroxycarboxylic acid. It is the sour component found in Citrus fruits such as lemons and mandarins, and is present in lemon juice at about 5-8%. It is a member of the citric acid cycle and is produced by the condensation of acetyl CoA and oxaloacetate (citrate synthase). It inhibits the allosteric enzyme phosphofructokinase in the glycolytic pathway, and plays an important role in regulating the glycolytic pathway. 三塩基性ヒドロキシカルボン酸の一種。レモン,ミカンなどのかんきつ(柑橘)類Citrusの果実中に含まれる酸味成分で,レモン果汁には5~8%程度含まれる。クエン酸回路を形成する一員で,アセチルCoAとオキサロ酢酸の縮合(クエン酸シンターゼ)によって生成する。解糖系のアロステリック酵素ホスホフルクトキナーゼの阻害作用をもち,解糖系を調節するうえでも重要な役割を果たす。水から再結晶すると1分子の結晶水を含むものが得られる。
