Keratinized tissue occurs on the surface of vertebrates that live in the air. Its main component is keratin. It is a type of scleroprotein. It is used to make up the stratum corneum of the epidermis, hair, feathers, nails, and hooves. Keratin is insoluble in water and neutral salts and contains 10% cystine, whose disulfide bonds connect peptide chains. Hair keratin is of two types, α and β, due to differences in secondary structure; α is in its natural state and β is stretched (permanented hair is of β type). The formation and deposition of keratin on the cells of the surface layer of the epidermis is called keratinization, and as keratinization occurs, the cells die and their nuclei disappear.

空気中で生存する脊椎動物の体表に生じる角化組織。主成分はケラチンと呼ばれる。硬タンパク質の一種。表皮角層，毛・羽毛・爪(つめ)・蹄(ひづめ)などを構成する。ケラチンは，水や中性塩に不溶で，10％のシスチンを含み，そのS−S結合がペプチド鎖間をつないでいる。髪の毛のケラチンは二次構造の違いからα型とβ型があり，α型が自然状態，β型は引き伸ばされたもの（パーマネントをかけた髪はβ型）。また表皮表層の細胞に角質が生成沈着することを角質化といい，角質化に伴って細胞は死に，核は消失する。
