Also known as Kyouna. A one- to two-year-old vegetable of the Brassicaceae family. Its name comes from the fact that it was cultivated in rice paddies around Kyoto. The leaves grow in clusters of several dozen with petioles, are dark green, elongated, and deeply incised. They are harvested in February to March and used for pickles and soup. Mibuna (Mibuna) is a variant of this, with leaves that are not incised and are cultivated in the Kansai region.
