Chutney - Chutney (English spelling)

An Indian preserved food derived from the Hindi word chatni. It is also an essential condiment for curry dishes. Various fruits, herbs such as coriander, and vegetables such as tomatoes and green chilies are chopped or crushed and simmered with vinegar, sugar, and spices. Originally made at home, there are many combinations of ingredients, and the flavor can be made sweet or spicy. Commercially available bottled mango chutney is particularly useful as a condiment for curry, but in Europe and the United States, it is used as a condiment for cold meat dishes, and in Japan, it is replaced by fukujinzuke.

ヒンディー語のchatniに由来するインドの保存食。カレー料理の薬味としても欠かせない。各種のフルーツにコリアンダーなどの香草、トマトや青トウガラシなどの野菜類を刻むか、すりつぶすかして、酢、砂糖、スパイスとともに煮込む。本来は家庭でつくられるもので、材料の組合せは多数あり、味も甘口、辛口自由自在である。市販の瓶詰のマンゴーチャツネはとくにカレーの薬味として重宝だが、欧米ではそれ以外の材料でできたものを冷たい肉料理の薬味に利用、日本では福神漬けで代用している。
