An annual or biennial plant of the Asteraceae family. Native to the Mediterranean region. Cultivated as a vegetable in Japan and China, young seedlings are harvested between winter and spring and eaten. The whole plant has a unique fragrance. The leaves are alternate and deeply pinnately bilobed, have no petioles, and embrace the stem at the base. In spring, a stalk (known as a boll) grows from the center of the plant, and in May, a flower head about 3 cm in diameter appears at the apex of the stem. Yellow or sometimes white female ray flowers are lined up around the periphery, and the center is yellow and composed of bisexual tubular flowers.
