An annual or biennial plant of the Asteraceae family. Native to the Mediterranean region. Cultivated as a vegetable in Japan and China, young seedlings are harvested between winter and spring and eaten. The whole plant has a unique fragrance. The leaves are alternate and deeply pinnately bilobed, have no petioles, and embrace the stem at the base. In spring, a stalk (known as a boll) grows from the center of the plant, and in May, a flower head about 3 cm in diameter appears at the apex of the stem. Yellow or sometimes white female ray flowers are lined up around the periphery, and the center is yellow and composed of bisexual tubular flowers. キク科の一年または越年草。地中海地方原産。日本と中国で野菜として栽培され冬から春の間に若い苗をとって食用とする。全草に独特の香りがある。葉は互生して2回羽状に深く裂け,葉柄はなく基部は茎を抱く。春に株の中央に茎 (いわゆる薹〈とう〉) を伸ばし,5月頃に茎頂に径約 3cmの頭状花をつける。周辺には黄色,ときに白色の雌性の舌状花が並び中心部は黄色で両性の管状花から成る。
