Carthamin

C ₄₃ H ₄₂ O ₂₂ (910.77). The petals of Carthamus tinctorius , a safflower of the Asteraceae family, contain the flavonoid pigments carthamin (red) and safflor yellow A and B (yellow). After the water-soluble safrole yellow is eluted with water, the phenolic carthamin is eluted with an aqueous solution of sodium carbonate. Red needle-like crystals (pyridine). Melting point 228-230°C. Used as a red dye, as well as for coloring food and cosmetics. [ I ] Safrole yellow A: C ₂₇ H ₃₀ O ₁₅ (594.51). λ _max 400, 335. 226 nm (ε 10200, 6200, 7800. Methanol). [ II ] Safrole yellow B: C ₄₈ H ₅₄ O ₂₇ (1062.94). λ _max 408, 330, 240 nm (ε 22600, 14600, 10900. Methanol).
