Japanese: う巻 - うまき

...A general term for bony fish in the Anguillidae family, or one of these. Eels are born in the sea and grow in freshwater, but much of their life cycle is still shrouded in mystery. All of them belong to the Anguilla genus, and there are 16 species in the world, but three of these species are divided into two subspecies, making a total of 19 species. There are two species in Japan: the Japanese eel and the giant eel. All are warm-water fish, found in tropical or temperate regions. Their bodies are cylindrical, with well-developed pectoral fins but no pelvic fins, and their dorsal, caudal, and anal fins are continuous. ...

...The latter is cooked with a less sweet dashi broth, then rolled in a bamboo mat to give it its shape. A thick skewer of grilled eel wrapped around it is called "umaki," while a thick skewer of fish paste is called "datemaki." Fried eggs are cooked by cracking them into a heated frying pan with butter.
