Piperonal - Piperonal (English spelling)

A benzene derivative. Also known as heliotropine. It is naturally found in the essential oils of spirea, black locust, and wild bergamot flowers, and in the flower buds of vanilla. It is a white crystal with a heliotrope-like scent. There are two main methods for manufacturing it:

(1) It is mainly produced from safrole obtained from ocotia oil and sassafras oil. When safrole is heated with caustic alkali, it isomerizes to become isosafrole. When this is oxidized with ozone or dichromate, piperonal is obtained.

(2) Since catechol became available at low cost, synthesis from catechol also became important.

It is widely used as a floral compound fragrance such as lilac, sweet pea, carnation, etc. As a fragrance for cosmetics, it is used in a wide range of applications from high-end compound fragrances to room fresheners and soap fragrances. It is also important as a flavor when combined with vanilla.

ベンゼン誘導体の一つ。別名をヘリオトロピンheliotropineという。天然にはスピレア（シモツケ）、ニセアカシア、ワイルドベルガモットの花精油、バニラの花芽に含まれている。ヘリオトロープ様香気の白色結晶。おもな製造方法は次の2種類である。

(1)オコチア油、サッサフラス油から得られるサフロールから製造するのが主流である。サフロールをカ性アルカリで加熱処理すると異性化してイソサフロールになる。これをオゾンまたは、重クロム酸塩などで酸化するとピペロナールが得られる。

(2)カテコールが安価に供給されるようになってからは、カテコールからの合成も重要になった。

　ライラック、スイートピー、カーネーションなどフローラル系調合香料として広く使用されている。香粧品香料としては高級調合香料から室内芳香剤、せっけん香料まで幅広く使用されている。またバニラとの組み合わせによるフレーバーとして重要である。
