Its molecular weight is 284.5, its melting point is 69.6°C, and it forms white leaf-shaped crystals at room temperature. Like other higher fatty acids, it is insoluble in water and soluble in organic solvents. It is the main component of the various fatty acids that make up glycerides, and is found in particularly high concentrations in the fat (solid) of cows and sheep, but is rarely found in vegetable oils (liquid). Soap is made by saponifying oils and fats with caustic soda, and its main component is the sodium salt of stearic acid. Stearic acid is also obtained by the hydrogenation reaction of oleic acid.
