Brewed alcohol - Jyozoshu

A general term for alcoholic beverages made by fermentation. A classification based on the production method of alcoholic beverages, a term used in contrast to distilled alcoholic beverages and mixed alcoholic beverages. "Jo" refers to the process in which mash (fermented alcohol-containing material) swells and bubbles up, and the production of miso and soy sauce, among other processes, is called brewing. When grains are used as the raw material, such as in sake, doburoku, beer, Shaoxing wine, and makkali, they are fermented using koji or malt to convert them into sugar, and consumed as is or after filtering and clarifying. When sugary fruit juice is used as the raw material, such as in wine, the alcohol is made by fermenting it as is. The alcohol content is lower than distilled alcoholic beverages, at 3-20%, but the flavors vary depending on the raw materials, and the ingredients are also diverse.

発酵法によってつくられる酒の総称。酒類の製造法による分類で、蒸留酒、混成酒に対する用語。醸はもろみ(発酵したアルコール含有物)が膨らんで、ぶつぶつと湧(わ)く意を示すもので、みそ、しょうゆの製造も含め、このような工程を経るものを醸造といっている。清酒、どぶろく、ビール、紹興酒(シャオシンチウ)、マッカリのように穀類を原料とする場合は、麹(こうじ)や麦芽(ばくが)で糖化して発酵させ、そのままあるいは濾過(ろか)清澄したものを飲用する。また、ワインのように糖分を含む果汁を原料とする場合は、そのまま発酵させて酒をつくる。アルコール分は3~20%と蒸留酒に比して低いが、原料によってさまざまな風味を示し、また成分も多様である。
