A perennial plant of the ginger family (illustration). It is known worldwide as a spice. It is believed to have originated in India in ancient times, but no wild species have been found. As it is native to the tropical regions, it prefers high temperatures and humidity, and in Japan it grows well from July to September. The plant grows to a height of 60 to 90 cm, and the underground stem gives rise to successively shortened branches, each of which produces upright stems and leaves. As it grows, the underground stems at the base of each stem and leaf swell and become gnarled. The underground stems are fleshy, yellow, fibrous, and aromatic and spicy.
