Kanoshita - Kanoshita

Japanese: カノシタ - かのした
Kanoshita - Kanoshita

An edible mushroom of the Basidiomycete family, Polyporaceae. The cap is irregularly round, 5-8cm in diameter, and has soft, egg-coloured flesh. Those that are entirely white are called Shirokanoshita. The stem grows to the side of the cap, or off-centre. The underside of the cap is densely covered with countless needles, which produce spores on their surface. In autumn, they grow in clusters on the ground in rows in scrub forests, hence the local name Nunobiki (Cloth-pulling). They are also known by other names such as Kanoko and Tsuchikanoko (Tohoku region). They are widely distributed throughout Japan and the world.
