…In Britain, a distinction is generally made between shallow tarts and deep pies, and a flat fruit pie with a pastry top is also called a tart. In France, it is often called a flan because it is made in a bottomless mold called a flan. There is also a type of tart made by filling a mold with pastry, topped with a mixture of egg yolks, cream, cheese, ham, shrimp, crab, etc., and baking the surface until golden brown.
