EC 4.2.1.3. Also known as aconitate hydratase. An enzyme that catalyzes the reaction of adding water to cis -aconitate to produce citric acid or isocitrate. It is an enzyme involved in one step of the tricarboxylic acid cycle and is widely found in living organisms. In a system in which citric acid is continuously converted to isocitrate, cis -aconitate exists bound to the enzyme and does not become free. This enzyme has strict stereospecificity for the cis form. The ratio of each substance at equilibrium is citric acid: cis -aconitic acid: isocitric acid = 91:3:6.
