It is found in Aconitum , horsetail, sugar cane, and sugar beet, and can convert from the trans configuration to the unstable cis configuration via the anhydride. It can be obtained by dehydrating citric acid with sulfuric acid, but can also be obtained from molasses. Leaf-shaped crystals. Melting point 194-195 °C (decomposition). p K a1 2.8, p K a2 4.66 (25 °C). Easily soluble in ethanol, insoluble in ether. When heated to its melting point, it becomes itaconic anhydride, and when heated with water to 180 °C, itaconic acid and carbon dioxide are produced. The melting point of cis -aconitic acid is 125 °C. It easily converts to the trans configuration when heated. It is used as a plasticizer for rubber and resins.
