A summer-green fern of the bracken family. It is found in temperate regions around the world and grows in sunny grasslands. The rhizomes grow to several meters and branch, from which young shoots emerge. The leaves reach a height of about 1.5 meters and are slightly hairy brown. When unfolded, they are three-pinnate leaves that are oblong in shape and somewhat hard and glossy. The young shoots are boiled and soaked in water before eating. The stems break easily when picked, and are thick and mucus-producing, making them the best quality. Starch (bracken powder) is extracted from the rhizomes and used to make bracken mochi (bracken mochi). ワラビ科の夏緑性シダ植物。世界各地の温帯に分布し,日当りのよい草地に生える。数mに長く伸びた根茎は分岐し,その先から若芽を出す。葉は高さ 1.5mぐらいに達し,褐色の毛が少しある。展開すると3回羽状に分れた葉となり,全体の形は長三角形で,質はやや硬く光沢がある。若芽をゆで,水にさらしてから食用とする。茎は摘むとすぐ折れて,太く,粘液の出るものが上質である。地下茎からはデンプン (蕨粉) をとり蕨餅などにする。
