These are hard, unglazed bowls and plates commonly known as Gyoki-yaki or Toshiro-yaki in the Aichi Prefecture region, and in some areas are also called rice husk ware because of the rice husk marks on the edge of the foot. The name Yamachawan is thought to have come from the fact that many defective bowls and plates that were discarded are scattered at old kiln sites in the mountains. If it refers to the Yama-bushi and Ko-bushi that appear in the Engishiki, it corresponds to a set of white porcelain (ash-glazed pottery) bowls and small bowls, but usually it refers to white porcelain pottery that transformed from white porcelain bowls into unglazed miscellaneous utensils for the general public in the late 11th century. 愛知県地方において俗に行基焼あるいは藤四郎焼と呼ばれている硬質・無釉の碗,皿類で,高台端に籾殻痕があるため,一部の地域ではもみがら焼とも呼んでいる。山茶碗の名称は山中の古窯跡に廃棄された碗,皿類の不良品が数多く散在しているところから出たものと思われる。《延喜式》にみえる山坏,小坏を指すとみる場合には,白瓷(灰釉陶器)碗・小碗のセットに当たるが,通常,白瓷碗類が11世紀末葉に無釉の民間雑器に転化した白瓷系陶器のことを指している。
