A French pastry made by candied large chestnuts (marrons) and then covering the surface with a sugar coating (= glacé). It has been made in France since around the 17th century. The chestnuts are peeled, steamed to remove the astringency and soften the flesh, and the skin is carefully removed. These are then soaked in syrup with added vanilla essence to allow the sugar to seep in, starting with a syrup with a low sugar content, then gradually changing to syrup with a higher sugar content, and allowed to soak slowly for over 10 days. Finally, the sugar liquid on the surface is washed off and dried to complete the product. As the outer shape is important for marrons glacés, it is important to take care not to damage the flesh or distort the shape.
