Also known as table beet. A biennial herb of the Chenopodiaceae family native to southern Europe. The basal leaves are stalked and oblong-ovate. In early summer, flower stalks about 1m tall emerge, producing many small yellow-green flowers. The roots are fleshy and spherical or spindle-shaped, the skin is red, orange yellow, or brownish purple, and the flesh is red, white, or gray, depending on the variety. Many have ring patterns on their cross sections. It is an essential ingredient in the Russian dish borsch, and is also boiled and used as a garnish for meat dishes, or pickled in vinegar for salads. It belongs to the same species as Swiss chard and sugar beet, and in Japan it is sometimes called sugar beet.

ビート

テーブルビートとも。南欧原産のアカザ科の一〜二年草。根出葉は有柄で長楕円状卵形。初夏,高さ1mほどの花茎を出し,黄緑色の小さな花を多数つける。根は多肉で,球形,紡錘形など,皮は紅,だいだい黄,帯褐紫色など,肉は紅,白,灰色など品種により異なる。横断面に圏紋のあるものが多い。ロシア料理のボルシチに不可欠で,またゆでて肉料理の添えものとしたり,酢に漬けてサラダとする。フダンソウやテンサイと同じ種に属し,日本ではテンサイをさすこともある。
