A deciduous tree of the Anacardiaceae family. It is cultivated for its edible nuts. It is said to have originated in Iran, but is now cultivated from Afghanistan to the Mediterranean region. It grows to a height of about 9m, with large pinnate compound leaves and several pairs of leathery leaflets. It is dioecious, and produces small flowers that grow in clusters. The fruit is an ellipsoid 1.5-2cm long, ripens white, and contains a green kernel. The seeds inside the kernel are known as pistachios, and are used raw or as a high-quality nut in confectionery. The Chinese pistachio ( P. chinensis ), famous for its neatly shaped leaves, is also a member of the same genus, but is not edible. ウルシ科の落葉高木。ナッツを食用とするために栽培される。原産はイランといわれるが,現在アフガニスタンから地中海地方周辺にかけて栽培されている。高さ 9mほどで大きな羽状複葉をつけ,小葉は数対あって質は革状である。雌雄異株で,花は細かく,多数集って花序をつくる。果実は長さ 1.5~2cmの楕円体で白く熟し,中に緑色の核がある。核内の種子がいわゆるピスタシオナッツで,生食のほか,製菓用などに高級ナッツとして賞用される。なお葉の形が整然としていることで有名な中国産のカイノキ (トネリバハゼノキ) P. chinensisも同属の植物であるが,食用にはならない。
