This is made in the same way as sake, but without straining out the lees. It is also called "moromi-zake" or "nigori-zake" because it is cloudy. Until the beginning of the Showa era, it was widely produced for commercial purposes, but is no longer permitted. An exception is the "doburoku festival" held in various places, which is permitted by the National Tax Agency. Shirahige Tawara Shrine in Oita Prefecture is famous. Due to the crude ingredients and production method, most doburoku is very sour and of poor quality, but there are also good ones with a unique aroma. Alcohol content: 10-13%. 清酒と同じ方法で造った醪(もろみ)の,滓(かす)をこしとらないもの。〈もろみざけ〉,白濁しているので〈にごりざけ〉とも。昭和の初めころまでは営業用に広く造られたが,現在は許可されていない。例外として国税庁が許可した各地の〈どぶろく祭〉がある。大分県の白鬚田原神社などが有名。原料,製造法が粗雑なため,酸味が強く,粗悪なものが多いが,特有の香気をもった良質のものもある。アルコール分10〜13%。
