Doburoku (cloudy sake) - Doburoku
This is made in the same way as sake, but without straining out the lees. It is also called "moromi-zake" or "nigori-zake" because it is cloudy. Until the beginning of the Showa era, it was widely produced for commercial purposes, but is no longer permitted. An exception is the "doburoku festival" held in various places, which is permitted by the National Tax Agency. Shirahige Tawara Shrine in Oita Prefecture is famous. Due to the crude ingredients and production method, most doburoku is very sour and of poor quality, but there are also good ones with a unique aroma. Alcohol content: 10-13%.
