1786‐1889 French chemist. Born in Angers, he joined the laboratory of LN Vauclin at the Natural History Museum in Paris (1803), professor at the Lycée Charlemagne (1813), dyeing superintendent at the Gobelins tapestry factory (1824), professor of chemistry at the Natural History Museum held by Vauclin (1830), and director of the museum (1864-79). He was a member of the Academie des Sciences. His most important work, Chemical Studies of the Fatty Bodies of Animals (1823), summarized his research on fats over more than ten years and clearly established that fats are compounds of acidic substances and glycerin.
