Shabu-shabu

It is a type of hot pot dish. A deep pot is filled with water, and thinly sliced ​​beef or pork is placed in it, quickly cooked, and then eaten with sauce. This is the same form as chiri and uosuki, and is also called susui. Shabu-shabu is derived from the Chinese dish shurou, which means to rinse and wash meat. Shabu-shabu is popular for its light flavor, but it will not taste good unless high-quality meat is used. The sauce is made by adding 1 cup of soy sauce, 1/4 cup of vinegar, and the juice of 1 lemon. The sesame sauce is made with 70 grams of ground sesame seeds, 5 cups of dashi stock, and a little chili oil.

鍋(なべ)料理の一つ。深い鍋に水を張り、火にかけて、その中に薄切りの牛肉または豚肉を入れ、さっと火を通して、たれをつけて食べる。これはちり、魚(うお)すきと同じ形態で、すすぎという名称もある。しゃぶしゃぶは中国料理の涮肉(シヤンロウ)から転じたもので、肉をすすぎ洗う意である。しゃぶしゃぶは淡泊な味が喜ばれるが、質のよい肉を使わないとおいしい味が出ない。たれは、しょうゆ1カップに酢4分の1カップ、レモン1個分の絞り汁を加えてつくる。ごまだれは、すりごま70グラム、だし汁5カップ、辣油(ラーユー)少々の割合である。
