Saccharin

A compound known as a synthetic sweetener, it was first synthesized in 1879 by the Americans Remsen and Fahlberg, and was named after its resemblance to saccharose. Industrially, it is produced by oxidizing o (ortho)-toluenesulfonamide with an oxidizing agent such as potassium permanganate. It is a white crystal that sublimes in a vacuum. It has a slightly bitter taste, but is about 500 times sweeter than sucrose, so it is used as a sweetener in diet foods. It dissolves in ethanol (ethyl alcohol) but is difficult to dissolve in water, so the water-soluble sodium salt (C ₇ H ₄ NO ₃ SNa・2H ₂ O) is used as a sweetener. In the 1960s, animal experiments raised suspicions of carcinogenicity, and it was banned in the United States in 1977. However, subsequent experiments did not provide evidence of carcinogenicity, and it was removed from the list of carcinogenic compounds in 1991. It is currently approved for use in many countries, including the United States and China, and is used in large quantities. However, in Japan, the Food Sanitation Act stipulates the maximum amount of saccharin that can be used, so other synthetic sweeteners such as aspartame are widely used.

合成甘味料として知られている化合物で、1879年にアメリカのレムセンとファールベルクにより初めて合成され、サッカロース（ショ糖）に似せて命名された。工業的にはo(オルト)-トルエンスルホンアミドを過マンガン酸カリウムなどの酸化剤を用いて酸化する方法により製造されている。真空中で昇華する白色の結晶。わずかに苦味があるが、ショ糖のおよそ500倍の甘味をもつので、ダイエット食品などの甘味料として使われている。エタノール（エチルアルコール）には溶けるが水には溶けにくいので、水に溶けやすいナトリウム塩（C₇H₄NO₃SNa・2H₂O）を甘味料として用いている。1960年代には動物実験の結果から発癌(はつがん)性の疑いがもたれ、アメリカでは1977年に一度は使用禁止になった。しかし、その後の実験からは発癌性の証拠が得られず、1991年には発癌性化合物のリストから外された。現在では、アメリカ、中国など多くの国で使用が認められて大量に使われている。しかし、日本では食品衛生法によりサッカリンの最大使用量が定められているので、アスパルテームなど他の合成甘味料が多く使われている。
