A shrimp of the family Penaeidae, it is the most important coastal marine crustacean (illustration). It is prized for its tempura and sushi ingredients. It can reach a body length of 25 cm, but is usually under 20 cm (cephalothorax length 7 cm). It is sometimes called maebi, and juvenile shrimp at 5 to 6 cm in length are called saimaki. The body color is generally light brown or bluish gray with broad brown or bluish brown stripes running diagonally on the cephalothorax and horizontally on the abdomen. When the abdomen is bent, the stripes form a wheel, hence the name kuruma shrimp. Source: Heibonsha World Encyclopedia, 2nd Edition Information |
