Kümmel is the German word for caraway, and is a colorless liqueur that has the aroma of caraway. It was first made in Russia and was dry, but when it was brought to France it became sweet. Today it is mainly made in Russia, France, and Germany. It is made by steeping caraway in spirits, then distilling it to collect the essence, which is then added with sugar. In addition to caraway, essences such as coriander and lemon may also be added. There are three types of Kummel: (1) Arashkummel Arash is the name of a nobleman's estate during the Imperial Russian period. It is also called Russian Kummel. Alcohol content 45%, sugar content 30%. (2) Berlin Kümmel: Also known as German Kümmel. Alcohol content: 40%, sugar content: 10-20%. (3) Ice Kummel, also known as Kristall Kummel. It is so named because it has a high alcohol content and the sugar crystallizes and adheres to the inside of the bottle. It has 50-60% alcohol and about 20% sugar.
