Poultry are domesticated birds that humans have genetically improved from wild birds, and are different from "domestic birds" that are kept simply for fun. They are often kept for practical purposes such as meat, eggs, and feathers, but they can also be kept as pets. There are many poultry birds in the Galliformes order, including chickens native to Southeast Asia, guinea fowl native to Africa, turkeys native to North America, and quails. Other species in the Anatidae order include the goose, which originates from the wild goose, and the duck, which originates from the mallard, and the pigeon, which originates from the rock dove native to the eastern Mediterranean coast.

鳥類に属する家畜を特に家禽という。人間が野生の鳥を遺伝的に改良したもので，ただ楽しみのために飼われる「飼い鳥」とは異なる。肉，卵，羽毛など実利のため飼育することが多いが，愛玩用としても飼う。キジ目の鳥には家禽が多く，東南アジア原産の鶏，アフリカ原産のほろほろ鳥，北アメリカ原産の七面鳥，さらにうずらなどがある。そのほかガンカモ目ではガンを原種とする鵞鳥，マガモが原種のあひる，ハト目に東部地中海沿岸原産のカワラバトが原種の家ばとなどがあげられる。
