A food made by grinding and processing oats. It has been eaten in Europe and other places since ancient times. This type of processing first started in Scotland, and it is still known worldwide as Scotch oatmeal.

There are two main types of oatmeal: groats or ground oats, which are made by polishing oats, roasting them, and then crushing them, and rolled oats, which are made by steaming polished oats and pressing them.

The typical way to eat oatmeal is to put 1 part oatmeal to 5 parts water in a pot, stir and simmer until it becomes a porridge-like consistency. Serve in a soup bowl and add sugar and milk. It is best eaten while hot. Oatmeal can also be mixed into cookies, biscuits, bread, and pancakes and baked, or made into pudding or soup.

エンバク(オート麦)をひき割るなどして加工した食品。古くからヨーロッパなどで食用とされてきた。このような加工を始めたのはスコットランドで、いまもスコッチ・オートミールとして世界的に知られている。

種類

オートミールには大別して2種ある。エンバクを精白し、炒(い)ったあと粗砕きしたものをグローツあるいはグラウンドオーツとよび、精白エンバクを蒸気で加熱し、圧扁(あっぺん)したものをロールドオーツとよぶ。

栄養

タンパク質は約14%と米の約2倍あり、また小麦粉よりも多い。食物繊維やビタミンB1にも富んでいる。消化もよく、このため、古くから栄養的な食品とみられてきた。

料理

オートミールの一般的な食べ方は、オートミール1に対し、湯5の割合で鍋(なべ)に入れて、かき混ぜながら粥(かゆ)状に煮る。スープ皿に盛り、砂糖、牛乳などをかけて食べる。熱いうちがよい。オートミールは、このほか、クッキー、ビスケット、パン、ホットケーキなどに混ぜて焼いたり、プディングやスープにして食べることができる。
