...The baked shell is cut or holes are made in the sides and the hollows are filled with cream. Variations include the éclair, which is a long, baked strip filled with cream and drizzled with chocolate, the swan- or flower-basket-shaped ones, the bite-sized petit choux, the saint-honoré, which is a crown-shaped arrangement of petit choux around the edge of a pastry, and the croquembouche, which is a pyramid-shaped pile of cream puffs.
[How to make]
For the basic amount of choux pastry (for about 15 pieces), put 250cc of water or milk, 90g of butter, and a little salt in a pot and heat it. When it boils, remove from the pot and add 125g of well-sifted strong flour all at once, mixing quickly.
