Eugenol - eugenol

Japanese: オイゲノール - おいげのーる（英語表記）eugenol

One of the essential oil components contained in clove oil and cinnamon oil. A pale yellow liquid with a strong spicy scent. Clove oil and cinnamon leaf oil are extracted with a 3-5% aqueous solution of sodium hydroxide, neutralized, and the separated oil is then rectified. It can also be synthesized using guaiacol as a raw material.

Eugenol is widely used in carnation-based compound flavorings, and is also used as a food flavoring in meats, sausages, and sauces. It is also the raw material for the synthesis of vanillin, which is an important flavoring agent.

Japanese:

ちょうじ油、桂皮(けいひ)油などに含まれる精油成分の一つ。強いスパイシーな香気を有する淡黄色の液体。ちょうじ油、シナモン葉油を3～5％水酸化ナトリウム水溶液で抽出、中和したのち、分離した油分を精留する。また、グアヤコールを原料として、合成する。

　オイゲノールはカーネーション系調合香料に広く用いられる。また食品香料として畜肉、ソーセージおよびソースに用いられる。さらにバニリンの合成原料でもあり、香料としても重要なものの一つである。
