One of the saturated cyclic terpene ketones contained in plant essential oils. Menthone has an asymmetric carbon in the molecule and exists as an optical isomer. The boiling point is 207°C ( l- isomer) and 204°C ( d- isomer). It is a colorless, transparent liquid that is slightly soluble in water and soluble in organic solvents such as alcohol and benzene. l -Menthone is contained in about 20% of peppermint oil, has a peppermint-specific fragrance, and has a specific optical rotation of -29.17°. It is an important raw material for synthetic fragrances, and is used in compound fragrances such as lavender, rose, and geranium, as well as in food flavorings.

植物精油中に含有される飽和環状テルペンケトンの一つ。メントンは分子内に不斉炭素をもち，光学異性体が存在する。沸点207℃(l体)，204℃(d体)。無色透明の液体で，水に微溶，アルコール，ベンゼン等有機溶媒に可溶。l‐メントンはハッカ油中に約20％含まれ，ハッカ特有の芳香をもち，比旋光度＝－29.17゜。合成香料原料として重要で，ラベンダー，ローズ，ゼラニウム等の調合香料，食品香料として用いられる。
