Maitake (Maitake) - Grifola frondosa

Japanese: マイタケ(舞茸) - マイタケ(英語表記)Grifola frondosa
Maitake (Maitake) - Grifola frondosa
Basidiomycetes, order Aphyllosteganaceae, family Polyporaceae. Large fruiting bodies grow on stumps and the bases of old trees such as oak, chestnut, and beech. It is a harmful fungus that causes white rot in the heartwood of oak, but the young mushrooms are delicious and highly valued. The fruiting bodies are fleshy and become tough when they ripen and dry. They have a cylindrical stem that branches into many parts, and at the end of each branch, small caps grow overlapping with other caps. The entire fruiting body sometimes becomes a mass with a diameter of more than 40 cm and can weigh more than 3 kg. Each cap is semicircular, fan-shaped, or spatula-shaped, with a dark brown or gray surface and a white stem. The underside of the cap produces pores, but the openings are circular or distorted circular. The spores are ovoid or elliptical with small projections and are colorless. Mushrooms that are very similar to this one include Choreimaitake (Choleimaitake), Tonbimaitake (Tobimaitake), and Shiromaitake (G. albicans) .
