A decapod crustacean of the family Pamphidiidae (illustration). An edible cold-water shrimp, it is an important species in the fishing industry. It grows to about 12 cm in length. Its body is uniformly crimson red, and it has many local names, such as akaebi (shrimp), nanban ebi (shrimp), and tongarasi (shrimp). In recent years, it has become more commonly known as amaebi (shrimp), due to its sweet taste when eaten raw. It is widely distributed from the coasts of the Sea of Japan to the Bering Sea and the North Atlantic, living on muddy bottoms at depths of 150 to 300 meters. In the Sea of Japan, it is the second largest caught shrimp after the Toyama shrimp. It is also caught in large quantities in Northern Europe. 十脚目タラバエビ科の甲殻類(イラスト)。寒海性の食用エビで,水産業上の重要種。体長12cmほどになる。体色は一様に紅赤色で,アカエビ,ナンバンエビ,トンガラシなど多くの地方名がある。近年では各地でアマエビの名が通りがよいが,刺身にしたときに甘みがあるためである。日本海沿岸各地からベーリング海,北大西洋まで広く分布し,水深150~300mの泥底にすむ。日本海ではトヤマエビに次いで漁獲量が多い。また北ヨーロッパでも多量にとられている。
