Japanese: ふすま(麩∥麬) - ふすま

It is a by-product of wheat flour production, consisting mostly of the bran remaining after the endosperm and germ have been separated from the wheat kernel, but it also contains a small amount of endosperm. It accounts for 20-25% of the total produced during wheat milling. Three types of bran are produced from the milling process: large bran, small bran, and powdered bran, which are mixed together for use as feed. Bran is high in fiber, but as shown in the table, it also contains high amounts of crude protein, crude fat, minerals (crude ash), and other nutrients, making it a valuable feed ingredient. Cattle prefer it as feed, and it has long been valued for use in dairy cows.

小麦粉製造の副産物で，小麦粒から胚乳，胚芽を分けた残りの皮部が大部分であるが，少量の胚乳部も含んでいる。小麦製粉の際に20～25％の割で製造される。製粉工程から大ふすま，小ふすま，粉ふすまの3種がでるが，混合されて飼料用とする。ふすまは繊維質が多いが，表に示すように粗タンパク質，粗脂肪，ミネラル(粗灰分)などの含量も多く，飼料価値が高い。飼料としてはウシの好むもので，昔から乳牛用として重視されてきた。
