It is fried rice. It is said to have originated in Western Asia, and examples of this include rice dishes such as palaw in Afghanistan, polow in Iran, and pilaw in Turkey. It is now popular in countries all over the world.

It is made by frying washed rice and chopped onions in butter, then seasoning with salt and pepper and cooking. In Japan, shrimp, crab, chicken, lamb, fish, shellfish, ham, etc. are used to make a variety of pilafs as a la carte dishes, while onions alone are used as a side dish for other dishes. When eating it as a side dish with other dishes, it is best to cook it a little harder than normal rice, and finish it off with the sauce until it is just the right softness.

炒(いた)めご飯のこと。発生は西アジア地方とされ、アフガニスタンのパラオpalaw、イランのポロウpolow、トルコのピラウpilawなどの米料理がそれにあたる。現在、世界各国に浸透している。

 作り方は、洗った米とタマネギのみじん切りをバターで炒め、塩、こしょうをして炊く。日本では、エビ、カニ、鶏肉、羊肉、魚貝類、ハムなどを利用して変化のあるピラフをつくって一品料理としたり、タマネギだけのものは他の料理の付け合せとして用いられている。付け合せとして他の料理といっしょに食べる場合は、ソースをかけるので、普通のご飯よりやや固めに炊き、ソースをかけることによってちょうどよい柔らかさになるように仕上げることが望ましい。
