Proteins contained in the cells of microorganisms. They are mainly dried as is and used as feed or food, but they can also be crushed to extract the protein and use it as a food ingredient. Since single-celled microorganisms such as yeast and bacteria are mainly used, they are often called single cell proteins (SCP). They are also called fermented proteins, and those produced from petroleum-based raw materials such as normal paraffin have also been called petroleum proteins. 微生物の菌体に含まれるタンパク質。主として菌体のまま乾燥して飼料や食料とするが,菌体を破砕してタンパク質を抽出し,食品などの素材とすることもできる。酵母や細菌のような単細胞微生物がおもに用いられるので,single cell protein(単細胞タンパク,SCPと略す)とよばれることが多い。発酵タンパクともいい,ノルマルパラフィンのような石油系の原料から製造されるものは石油タンパクとよばれたこともある。
