Terrine - French

This is a pâté dish made by packing a terrine into an oval ceramic dish and steaming it. It can be sliced ​​thinly and used for sandwiches or as an appetizer, and can be stored in the refrigerator for 2 to 3 weeks. To make it, place thin slices of pork fat in a ceramic dish, then place a mixture of sliced ​​and minced meat (offal, heart, liver, ham, veal, champignon, etc.) in layers, season with salt and pepper, and pack it in several layers. Pour in liquor (cognac or champagne) and cover the surface with pork fat. Sprinkle with peppercorns, bay leaves, and thyme, and seal the edges with flour dissolved in water. Place this terrine in a container one size larger than the dish, pour in hot water, and place in a water bath. Steam it over medium heat for about 2 hours. Remove the top lid, heat lard or poultry fat, and pour it over the meat. This fat keeps out air and helps preserve the food.

長円形陶器に詰めて蒸し焼きにしたパテpâté料理である。薄切りにしてサンドイッチに、前菜にと手軽に用いられ、冷蔵庫で2～3週間は保存がきく。作り方は、陶器に豚脂の薄切りを敷き詰め、薄切り肉とひき肉の混ぜ物（くず肉、心臓、肝臓、ハム、子牛肉、シャンピニヨンなど）を順に薄く置き、塩、こしょうをして、これを何段か重ねて詰めていく。洋酒（コニャックまたはシャンパン）を注ぎ、表面に豚脂をかぶせる。粒こしょう、ローレル、タイムを散らし、水溶きした小麦粉で縁(ふち)を貼(は)り付けるようにして密閉する。このテリーヌを一回り大きい容器に入れて湯を注ぎ、湯煎(ゆせん)にする。それを中火の天火で約2時間ぐらい蒸し焼きにする。上の蓋(ふた)を外し、ラードまたは家禽(かきん)の脂を熱して肉の上に注ぐ。この脂で空気を遮断して、保存ができる。
