beignet

...It usually refers to meat, fish, shellfish, or vegetables that are deep-fried in a batter of flour, beaten egg, and breadcrumbs, in that order. When meat is used, it is often called a cutlet. In a broad sense, it also includes fried foods such as French fries, which are deep-fried without battering the ingredients, fried foods such as fried chicken, which are deep-fried with flour, and fritters (called beignet in French), which are deep-fried in a batter made of flour, eggs, beer, etc. The fat and oil used for deep-frying is usually salad oil, but lard, butter, or butter can also be used.
