Chinese noodles - Chuka soba

Japanese: 中華蕎麦 - ちゅうかそば

〘 noun 〙 A general term for Chinese-style noodles. Made by adding eggs, salt, kansui (soybean paste) , and water to wheat flour. It particularly refers to ramen noodles that are boiled and put into soup, but they can also be fried or deep-fried.
