A food made by spreading fish paste on a thick bamboo or metal skewer and grilling or steaming it. It retains the original shape of kamaboko, but as more kamaboko were spread on a wooden board, it was called chikuwa kamaboko, and eventually it was shortened to chikuwa. The name chikuwa comes from the fact that when the skewer is removed and the cut edge is cut, the cross section looks like a bamboo slice, and this name can be found around Edo Ryori-shu published in 1674 (Enpo 2). Morisada Manko states that "Today's chikuwa is as shown in the diagram on the right (omitted), and the outside is wrapped around a bamboo mat and steamed, so it looks like the bottom of the edge," but this shape is now inherited by what is called Naruto and Chikuwa Fu. 魚のすり身を竹や金属の太い串(くし)に塗りつけて焼き,または蒸した食品。かまぼこの原形をとどめるもので,板に塗りつけるかまぼこが多くなるに及んで,ちくわかまぼこと呼ばれ,やがて単にちくわと略称されるようになった。ちくわの名は,串を抜いて小口から切るとその断面が竹を輪切りにした形に見えるためで,この名称は1674年(延宝2)刊の《江戸料理集》あたりから見られる。《守貞漫稿》には〈今制ノ竹輪,右ノ図(略)ノ如クス,蓋シ外ヲ竹簀ヲ以テ巻包ミ蒸ス,故ニ小口下ノ如キナリ〉とあるが,この形は現在では〈鳴門(なると)〉と呼ばれるものや〈ちくわ麩(ぶ)〉がうけついでいる。
