Enzymes that hydrolyze (digest) the peptide bonds of proteins. They are also called proteases. They are classified into four types based on the difference in the active center of the enzyme molecule: serine proteases (trypsin, chymotrypsin, etc.), which contain serine residues in the active center; thiol proteases (papain, etc.), which contain cysteine residues; acidic proteases (pepsin, etc.), which contain acidic amino acids in the active center; and metalloproteases (carboxypeptidase A, etc.), which contain metal ions as coenzymes. タンパク質のペプチド結合を加水分解(消化)する酵素。プロテアーゼともいう。酵素分子の活性中心の違いによって以下の四つに分類される。セリン残基を活性中心に含むセリンプロテアーゼ(トリプシン,キモトリプシンなど),システイン残基を含むチオールプロテアーゼ(パパインなど),酸性アミノ酸を活性中心に含む酸性プロテアーゼ(ペプシンなど),補酵素として金属イオンを含む金属プロテアーゼ(カルボキシペプチダーゼAなど)である。
