A type of Western confectionery. A dough made from flour and butter is laid in a tart dish, filled with fruit, jam, chocolate, cream or other fillings, and then baked. Sometimes the dough is baked first and the filling is added later. It is usually cut into portions for 8 or 10 people, but the small ones are called tartelettes. The tarts of Matsuyama City, Ehime Prefecture, are a Japanese-Western fusion fresh confectionery made of yuzu bean paste wrapped in castella cake, and are a Matsuyama specialty. It is said that the tarts first came about when Hisamatsu Sadayuki, the lord of Matsuyama Domain, who became the Nagasaki Tandai in 1645 (Shoho 2), tasted them at the Dutch trading post in Dejima. He was unable to forget the taste, and after returning to his post, ordered a confectionery shop in the castle town to make one. However, it is said that the tarts of Matsuyama at that time were sweets made of koshian bean paste wrapped in light bean paste, and were far from Nanban sweets. One theory is that the tarts were passed down in a modified form after Matsudaira Sadanobu issued an austerity order in 1787 (Tenmei 7), banning the production of Nanban sweets. It is only in modern times that the tarts have taken on the style of rolled castella cake.
