Egg wine - Tamagozake

A drink made by heating sake to a boil and adding eggs to it. Stir well, turn on the heat to evaporate the alcohol, and drink while hot. Add sugar and ginger as desired. It is drunk when one has a cold to warm the body and give one energy boost. The Edo period book "Honcho Shokan" shows how to make it by stirring five cups of water, one cup of koji mold, and half a cup of sugar together and bringing it to a boil, then adding one egg and stirring again.

清酒を加熱して煮立て、これに鶏卵を加えた飲み物。よくかき混ぜ、火をつけてアルコール分をとばし、熱いうちに飲む。好みにより砂糖やショウガを適当に加える。体を温め、精をつけるように風邪(かぜ)をひいたときなどに飲む。江戸時代の『本朝食鑑』には、水五杯、麹(こうじ)の黄衣(きかび)一杯、砂糖半杯をかき混ぜて沸かし、さらに鶏卵1個を加えてかき混ぜてつくる法を示している。
