Originally, it means fish eggs in Russian. In Japan, it refers to salted eggs separated from the ovarian membrane of salmon or trout. Salted eggs wrapped in the ovarian membrane are called sujiko. It is said that it originated as a substitute for caviar made by prisoners of war during the Russo-Japanese War (1904-05). Fresh roe are put into a fish egg separator to collect mature eggs. These are soaked in saturated salt water with a coloring agent added for 10-20 minutes, drained, and stored at low temperature. The larger the eggs and the brown, yellow, or gold they are, the better the quality is. They are enjoyed as a snack with alcohol, but can also be used in sandwiches and canapes. 本来はロシア語で魚卵の意。日本ではさけ,ます類の卵巣膜から分離された卵粒を塩漬にしたものをいう。卵巣膜に包んだまま塩蔵したものが筋子である。日露戦争 (1904~05) の捕虜たちが「キャビア」の代用品としてつくったのが,起りといわれている。鮮度の高い腹子を魚卵分離器にかけて成熟した卵粒を集める。これを発色剤を加えた飽和食塩水に 10~20分間漬込み,水切りしてから低温に貯蔵する。大粒で茶・黄・金色を呈するものほど良質とされる。そのまま酒の肴 (さかな) として賞味されるが,サンドウィッチ,カナッペにも利用される。
