A perennial aquatic plant of the Nymphaeaceae family. It is widely distributed in East Asia, India, Australia, West Africa, and North America. It grows in old ponds and swamps. From the rhizomes that crawl horizontally in the mud on the bottom of the water, elliptical leaves with long stalks attached in a shield shape float on the water surface. Young leaves are covered with a thick gelatinous mucilage. The leaf blade is about 10 cm long, green and shiny on the upper side, and purple on the underside. In summer, long flower stalks emerge from the leaf axils, and at the end of the stalks dark red flowers about 2 cm in diameter bloom, which emerge slightly above the water surface. From spring to summer, young shoots covered in mucilage are picked and eaten as sanbai-zu, vinegared miso, or jiru-no-mi.
