Fatty oil - Shibouyu (English spelling)

This refers to fats and oils (esters of fatty acids and glycerin) that are liquid at room temperature. They are also called fatty oils or simply oils. They are divided into vegetable oils and animal oils. Vegetable oils include soybean oil, rapeseed oil, rice oil, corn oil, sesame oil, cottonseed oil, safflower oil, linseed oil, paulownia oil, and castor oil, while animal oils include fish oil and whale oil. Vegetable oils contain unsaturated fatty acids such as oleic acid, linoleic acid, and linolenic acid, as well as some saturated fatty acids, but marine animal oils contain highly unsaturated fatty acids with a higher degree of unsaturation.

油脂（脂肪酸とグリセリンのエステル）のうち常温で液体のものをいう。脂油あるいは単に油ということもある。植物油と動物油に分けられる。植物油としては、大豆油、菜種油、米油、コーン油、ごま油、綿実油(めんじつゆ)、サフラワー油、あまに油、桐油(きりゆ)、ひまし油など、動物油としては、魚油、鯨油などがある。植物油は、オレイン酸、リノール酸、リノレン酸などの不飽和脂肪酸を含有し、ほかに多少の飽和脂肪酸を含むが、海産動物油は、さらに不飽和度の高い高度不飽和脂肪酸を含有している。
