Burdock is a biennial plant of the Asteraceae family, said to be native to Europe, but has been cultivated in mainland China and Japan since ancient times. Even today, it is cultivated in various parts of Japan as one of the important vegetables (root vegetables), and there are many varieties. The basal leaves have long stalks, the leaf blades are triangular-oval, and have noticeable white hairs. In late spring of the second year, the stems grow to a height of over 1m, and at the end they produce large flower heads similar to thistles. The involucre is hemispherical, surrounded by thorny involucre segments, and has many pale purple-pink tubular flowers. The custom of eating burdock is Chinese and Japanese, but in Western Europe, the roots of the Brahmannia ginseng (Brahmannia ginseng), which is also a member of the Asteraceae family, are eaten in the same way as burdock. キク科の越年草で,ヨーロッパ原産といわれるが中国大陸や日本では古くから栽培されてきた。今日でも日本では重要な野菜 (根菜) の一つとして各地で栽培され,多くの品種がある。根出葉は長い柄があり葉身は三角形状卵形で白い毛が目立つ。2年目の春遅く,高さ 1m以上もの茎を伸ばし,先端にアザミに似て大型の頭状花をつける。総包は半球形でとげのある総包片が包み,多数の淡紫紅色の管状花がある。なおゴボウを食用とする習慣は中国と日本のものであるが,西欧では同じキク科のバラモンジン (婆羅門参)の根をゴボウと同様に食用とする。主根を食用にするほか若芽や葉柄なども食べられる。
