Burdock (English name: Arctium lappa; burdock)

Japanese: ゴボウ(牛蒡) - ゴボウ(英語表記)Arctium lappa; burdock
Burdock (English name: Arctium lappa; burdock)
Burdock is a biennial plant of the Asteraceae family, said to be native to Europe, but has been cultivated in mainland China and Japan since ancient times. Even today, it is cultivated in various parts of Japan as one of the important vegetables (root vegetables), and there are many varieties. The basal leaves have long stalks, the leaf blades are triangular-oval, and have noticeable white hairs. In late spring of the second year, the stems grow to a height of over 1m, and at the end they produce large flower heads similar to thistles. The involucre is hemispherical, surrounded by thorny involucre segments, and has many pale purple-pink tubular flowers. The custom of eating burdock is Chinese and Japanese, but in Western Europe, the roots of the Brahmannia ginseng (Brahmannia ginseng), which is also a member of the Asteraceae family, are eaten in the same way as burdock. In addition to the taproot, young shoots and leaf stalks can also be eaten.
