A protein found in egg white that binds specifically and strongly to biotin. It consists of four subunits with biotin-binding sites. The avidin-biotin reaction is faster than the antigen-antibody reaction, so it is used to separate biological components by affinity chromatography and to detect biological components with high sensitivity by labeling them with biotin instead of radiolabeling.
