Jinling
Sake from Kagawa. The name of the sake comes from the Edo period Confucian scholar Rai Sanyo, who called Kotohira Kinrei (Jinling) when he visited the area, as he felt that there were things in the area that reminded him of the ancient Chinese capital of Jinling. They offer a range of sake from daiginjo to regular sake. They have won many awards at the National New Sake Tasting Competition. The rice used is Yamada Nishiki and other varieties. For brewing water, Tadotsu uses "Yahata no Onyu" water, while Kotohira uses "Showa Ido" spring water from Mt. Zozu. The brewery, Nishino Kinrei, was founded in 1789. They are located in Kotohira-cho, Nakatado-gun.

香川の日本酒。酒名は、江戸時代の儒学者・頼山陽が琴平来訪の折、当地に中国の古都・金陵を想わせるものがあるとして、琴平を金陵と呼んだことにちなみ命名。大吟醸酒から普通酒までをそろえる。全国新酒鑑評会で受賞実績多数。原料米は山田錦など。仕込み水は、多度津は「八幡の恩湧(やはたのおんゆ)」、琴平は象頭山(ぞうずさん)の湧水「昭和井戸」を使用。蔵元の「西野金陵」は寛政元年(1789)創業。所在地は仲多度郡琴平町。
